Getting Real Day 2

Sleep

I was able to go to bed much earlier last night so my quantity of sleep improved but the quality was still only okay.

Breakfast

Breakfast was pretty simple today, 2 eggs scrambled in ghee, 3 slices of prosciutto, and 8 strawberries.

Pure Indian Foods has Whole30 approved ghee which is lovely. I have since learned that ghee is not allowed on our stricter program so I will be saving that for after the challenge.

Lunch

Lunch was pretty simple today. I cooked an extra chicken breast last night so I had leftover chicken for today’s salad. The salad is the same as yesterday: romaine and spinach, sliced cucumber, diced red bell pepper, grape tomatoes, and dressing made from extra virgin olive oil, apple cider vinegar, and Dijon mustard.

Snack

The snack is the same as yesterday (I need to get more creative with my meals). Pineapple chunks, 2 apricots, and 1 oz almonds.

Dinner

Boiled shrimp, homemade guacamole (avocados, lime juice, japaleno, and red onion), baby carrots, and fried plantains in coconut oil.

I followed the recipe for fried plantains from Stupid Easy Paleo (which is a great resource by the way).

Overall

I felt hungrier today and still somewhat tired but definitely had more energy.
